WINEMAKING. This unique 100% Cabernet Sauvignon is sourced exclusively from a tiny 1-acre parcel right on the grounds of Stanford University’s School of Medicine. This vintage is gracefully structured with ripe, mature tannins that have been softened by 2-years of aging in French oak (50% new barrels). Exquisitely balanced with vibrant acidity and a poised yet playful finish. A classic example of intensity tempered by elegance and finesse!
TASTING
Aroma: Its dense, saturated color paves the way to elevated aromas of lavender, wild berries and herbes de Provence, cinnamon, and dark chocolate.
Palate: Elegant and silky tannins, layered with juicy black cherry, cedar and crème de cassis, with a lengthy, uplifting finish.
FOOD PAIRING. The ideal complement for grilled lamb, Dry-aged ribeye steak with truffle fries and bearnaise sauce., roasted vegetables, Camembert cheese or pasta with a red sauce.
