WINEMAKING. Picchetti Winery’s very first time producing a Cabernet Sauvignon from the Red Tail vineyard in Paso Robles. Elevations in the Estrella District range between 745 to 1,800 feet above sea level through a series of terraces and foothills. The warm summer days are cooled by modest maritime sea breezes through the Templeton Gap effect, which is reflected by early morning fog in the summer, making the terroir quite perfect for the cultivation of premium Cabernet Sauvignon.
TASTING
Aroma: Red fruit driven, with baked strawberry, cherry, raspberry, pie crust and vanilla bean.
Palate: Soft and approachable finish with luxurious oak tannins and toasted cedar.
FOOD PAIRING. Pair with Kobe-style beef with a peppercorn demi-glace, wild mushroom ragoût, roasted bone marrow, or a grilled portobello mushroom sandwich on brioche with aged cheddar, mixed greens & truffle aioli.
