VARIETAL. 100% Chardonnay
VINEYARD. Leslie’s Estate, Montebello
WINEMAKING. Our Montebello Chardonnay is crafted with 100% organic farming practices. We carefully cultivate the grapes until they reach optimal ripeness on the vine, then swiftly hand-pick and press them, followed by a gentle cold settling period lasting 24 hours. The resulting juice is delicately transferred into a combination of French and American oak barrels, where it undergoes fermentation until completely dry. After primary fermentation, the wine undergoes a thorough malolactic conversion process, and it's then meticulously barrel-aged for 12 months, with 50% of the barrels being brand new, ensuring a rich and nuanced flavor profile.
TASTING
Aroma: Brimming with luscious tropical aromas of pineapple and coconut, white nectarine, French vanilla, nutmeg and fresh baked brioche.
Palate: Delicately integrated flavors of blood orange, apple, pear, lemon, apricot, ginger, melon, papaya, and white floral notes. Toasted brioche, with a long luscious finish.
FOOD PAIRING. This sophisticated wine will pair beautifully with east coast-style lobster rolls, triple cream brie cheese, rich seabass, a parmesan leek quiche, Dungeness crab salad, grilled artichokes with lemon aioli, or a blood orange soufflé.
