Meticulous use of French oak (45% new barrels) beautifully transforms the intense mountain fruit into a wine with uncommon richness, luxurious texture and a velvety smooth finish.. This extraordinary wine is a joy to taste now, but the savory leathery tannins will further reward those patient enough to cellar it through 2040 or longer. TASTING
Aroma: Dark currant, dark red and deep purple fruits, licorice, cigar box, elegant oak, and bay laurel.
Palate: Layers of cocoa and dark chocolate, chocolate-covered cherry candies, and polished tannins that glide into a bold, lingering finish.
FOOD PAIRING. Pair with Kobe-style beef dishes, a roasted prime rib, truffled french fries, or a grilled portobello mushroom sandwich on brioche with aged cheddar, mixed greens & aioli. The owner, Leslie, loves pairing it with Fred’s beef from Schaub’s at Stanford Shopping Center.
