Description

VARIETALS. 50% Chardonnay and 50% Pinot Noir sourced from the Mission Ranch Vineyard in Arroyo Seco.

WINEMAKING
Hand-crafted using the *traditional Méthode Champenoise, this complex dry rosé is a blend of equal parts Pinot Noir and Chardonnay. The two lots were barrel-aged sur lie for 15-months. Following the secondary fermentation, the bottles are stored horizontally and aged on their lees for 5-years. This extended contact imparts distinctive flavors and textures to the wine, contributing to its complexity.

*Traditional Méthode Champenoise, arguably the most esteemed method for sparkling wine production, is also the most expensive. The pivotal aspect lies in its transformation from still to sparkling within the bottle. After primary fermentation, a blend of wine, sugar, and yeast initiates secondary fermentation, producing bubbles. The wine is aged, riddled, disgorged, and corked, culminating in a complex sparkling wine.


TASTING
Aroma: Dried strawberry, cherries and raspberry, tropical, candied ginger and melon.
Palate: During tirage aging, the wine matures, acquiring flavors evocative of freshly baked bread, subtle notes of white flowers, and citrus blossoms. These elements enhance its elegant mouthfeel, imparting a light and refreshing sensation on the palate.


FOOD PAIRING. Pop the cork and enjoy with Charcuterie, salty snacks, ceviche, steak tartare, caviar, oysters, fried chicken, truffled popcorn, duck fat french fries, deviled eggs, warm olives with feta.
