Description
VARIETAL. 100% Sauvignon BlancVINEYARD. Cedar Lane Vineyard, Arroyo Seco.
WINEMAKING. Cultivated in the rocky soils of Arroyo Seco, these grapes were hand-picked at dawn and were still cold when they arrived at the Picchetti crush pad. The clusters were carefully placed into our small bladder press, and the free run juice transferred directly to a stainless steel tank for an extended 33-day fermentation and 6-months of aging. We avoided secondary malolactic fermentation, preserving the wine's clean, crisp texture, but the lees were stirred weekly to benefit its aromatic attributes.
TASTING
Aroma: Incredible aromatic with notes of white peach, grapefruit, pear, lemongrass tarragon and nutmeg.
Palate: The mouthfeel is thirst-quenchingly dry with flavors of pineapple, passion fruit and lychee.
FOOD PAIRING. Enjoy this delicate wine with Japanese cuisine such as soba noodles, shabu shabu, or sushi. It is delightful with petrale sole, oysters or a goat cheese tart as well as an Indian chicken tikka masala
