WINEMAKING: Sourced exclusively from a tiny, one-acre parcel nestled within Stanford University’s School of Medicine, farmed organically, this distinctive Cabernet Sauvignon is a rare gem. Aged for two years in French oak (50% new), the wine showcases a graceful structure with ripe, integrated tannins, vibrant acidity, and a poised yet playful finish. A compelling expression of power, elegance, and finesse.
TASTING:
Aroma: Deeply saturated in color, the wine opens with elevated aromas of lavender, wild berries, herbes de Provence, and cinnamon. Notes of dark chocolate, crushed rock, juicy red fruits, clove, black pepper, and a gentle kiss of oak round out the bouquet.
Palate: Silky tannins carry layers of juicy black cherry, cedar, and crème de cassis. Hints of cocoa nibs and savory herbs unfold on the mid-palate, leading to a long, uplifting finish.
FOOD PAIRING: An ideal match for grilled lamb, dry-aged ribeye with truffle fries and Béarnaise, or pasta with a rich red sauce. It pairs beautifully with roast duck, mushroom risotto, age, grilled portobello mushrooms, and dark chocolate with sea salt.
