VINEYARD. Hammond Crosslands, Estrella District, Paso Robles.
WINEMAKING. Many of California's wine-growing regions are too hot for this fickle grape, which is prone to sunburn and bleaching, but the Estrella District in Paso Robles enjoys similar climatic conditions to those found in the Iberian Mountains of La Rioja. Cooler temperatures to maintain acidity, but warm enough to develop the sugars required for full flavor development. This vintage was aged for 18-months in French oak (46% new barrels), taming the beast within, and permitting its unique characteristics to shine through.

TASTING.
Aroma: Smoked paprika, complex oak notes, cedar, with dried fig, boysenberry, and red fruit spice.
Palate: Smooth textures of leather pave the way to concentrated deep fruit flavors of blackberry, blueberry, plum, dusty cocoa, coconut, tobacco, with balanced acidity.
FOOD PAIRING. Have fun pairing it with Santa Maria tri tip, Manchego cheese, Iberian ham, marinated olives, Spanish mussels with chorizo, or paella.
